Ingredients:
1 cup prepared tortilla masa
2 cups milk, divided 
5 cups water, divided
1 cinnamon stick 
1 Mexican chocolate 
6 ounces sugar or 1½ piloncillo, grated

1) In medium mixing bowl, blend masa with 1 cup of water
2) Add a second cup of water gradually 
3) Heat the remaining water in a medium saucepan 
4) Once the water is boiling, lower to medium heat and add cinnamon stick, chocolate and sugar or piloncillo 
5) When the chocolate is dissolved and starts to boil, add masa mixture and stir constantly to avoid lumps and to keep from sticking to the bottom of the pot 
6) Lower heat to medium and continue stirring until masa is cooked (30 minutes) 
7) Add the milk and stir for 5 more minutes 
8) Use a molinillo to finish your atole (it adds foaminess and will remove any lumps of masa that might remain)
