1,25 kg de farinha de milho branca
1,25 kg de farinha de milho amarela
2,5 kg de farinha de centeio
100 gr de farinha de malte
2500 ml de água
50 gr de levedura
Sal - qb
Couve Galega
Preparação
Aquecer a água a 45ºC com uma pitada de sal.
Amassar as farinhas com a água.
Quando estiver bem amassado, adicionar a levedura e amassar mais um pouco.
Repousar a massa 30 minutos.
Separar a massa em pedaços de 600 a 800 gramas, enrolar, amassar e estender a massa mais um pouco com ajuda de bastante farinha de centeio.
Colocar a massa num tabuleiro forrado com couve galega.
Levar a um forno pré-aquecido a 260ºC, cozer 1 hora as broas.
Quando já estiver cozido, guardar as broas debaixo de um pano para ficarem bem abafadas até arrefecer.

Method
Heat the water to 45ºC with a bit of salt.
Knead the flours with the water.
When it is well kneaded, add the yeast and knead a little more.
Let the dough rest for 30 minutes.
Separate the dough into pieces of 600 to 800 grams. Roll, knead and extend the dough a little more with the help of plenty of rye flour.
Place the dough on a tray covered with collard greens.
Place in a preheated oven at 260ºC, cook the bread for 1 hour.
When it's already cooked, store the bread under a cloth so that they are well muffled until cold.
