Pasta and peas
Ingredients:
Pasta (tubetti)
Baby Peas
White Onion
Olive Oil
Salt
Pepper
Freshly Grated Parmigiano
Freshly Grated Pecorino
How to make it
Peel and chop the onion. Heat the oil in large pan. Add the onions to the pot and stir to coat them with oil. Cook the onions for five minutes or until they're soft, stirring occasionally to prevent sticking. .
Add the peas, salt and pepper to the pot and stir to combine. Let the peas cook for five minutes, stirring occasionally. They should be almost fully cooked.
Add the water to the pot. Cover the pot with a lid and let the water come to a boil. When the water is boiling, add pasta and stir it to prevent sticking. Cook the pasta until it's al dente, stirring frequently. When the pasta is cooked, do NOT drain the water.
Turn off the heat and stir in Parmigiano and Pecorino.
Peas are a good source of proteins. They are low in fat.
Nutritionally, peas are a good source of some vitamins and minerals. In particular they are a good vegan source of iron which is needed for making new red blood cells and transporting oxygen around the body, and B vitamins, which help us convert the energy from our food.
They are also a good source of phosphorus. We need phosphorus to help build strong bones and teeth.
Green peas also contain lutein, which provides benefits to eye health and reduce the risk of macular degeneration and eye-related diseases.
