The men wear embroidered shirts, sashes, and ponchos. Their espadrilles, commonly called oshotas, are made of rubber, suitable for hard work in the fields.

Melloco: The melloco is an annual, compact plant with creeping and semi-creeping growth habits. It is the second most important tuber after the potato.

The woman wears a white embroidered and laced blouse, preferably black, with a tupo that supports the piece, adorned with red and light blue pearl necklaces, silver earrings with motifs typical of the Cañari worldview, and her hair as a braid.

This people occupied the territory of the current provinces of Cañar and Azuay, however, there is also evidence of Cañari occupations south of Chimborazo, north of Loja and inside El Oro.

Chicha de Jora: It is prepared with jora flour, which is malted (germinated) corn. Several connoisseurs affirm that chicha was the favorite drink of the Inca nobility, consumed mainly during the Inti Raymi, where the kings toasted with it in honor of the Sun.
