PIZZA PANCAKES
Ingredients
2 cups flour
2 tablespoons sugar
4 teaspoons backing powder
1/2 teaspoons baking soda
1/4 teaspoons salt
1 3/4 cups milk
2 eggs
2 tablespoons melted butter

1. Mix dry ingredients together with a whisk.
2. Whisk wet ingredients together with melted butter

Make a well in the middle of the flour mixture and pour wet ingredient mixer in. But not too much. Your batter should be a bit Lumpy.

How to cook it
1. Heat a large Skillet to a medium Heat.
2. Lightly butter the pan.
3. Pour the entire mixture into the pan.
4. Using at least two spatulas try to flip it when bubbles appear you may need a pizza pan to fit it.

When the pancake is golden brown grab pizza pan, a fork, knife, syrup and dig into it.

Mrs. Shipe's Cabbage Chicken
Even people who are not particularly fond of cabbage enjoy this recipe, and good too because it
feeds a crowd! The original recipe comes from the 365 Ways to Cook Chicken Cookbook. This dish
boils over in the oven every time. It just does. Use a bigger dish. No kidding.
3 pounds chicken, cut up
2 cups flour
2 Tablespoons Seasoned Salt
¼ cup cooking oil
1 onion, chopped
3 apples, peeled, cored and chopped
½ head cabbage, chopped
1 teaspoon salt
1 teaspoon sugar
1 large can tomatoes
2 cans tomato sauce
1 cup shredded mozzarella cheese

Mix flour and seasoned salt. Rinse chicken. Dredge chicken in flour.
Place in pan of hot oil (on medium heat). Brown both sides.
Do chicken in batches so that there is a little space between each piece as it is browning.
Set chicken aside on a plate. (It will not be completely cooked and it might “bleed” a little. No worries.)
When the chicken is done, sauté the onion until translucent. Add apple and
cabbage. Cook about 3 minutes more. Add salt, sugar, tomatoes and tomato sauce. Spray a casserole dish. No, not that one, remember I told you to use a bigger one. Put the chicken on the bottom. Pour the sauce mixture on top. Sprinkle the cheese on top.
Bake, covered, at 350 degrees 1 hour. Take off cover, leave 10 minutes for cheese to brown.
Serve over egg noodles.
