The arroz with gandules (rice with pigeons peas) is one of the most traditional meals at Christmas. It began in the region of the Greater Antilles. It started around the 16th century, when the people learned how to grow rice on the island. When Ponce de Leon arrived with Columbus in 1493, the Spanish added beef, pork, rice, wheat, and olive oil to the island. This famous dish became Puerto Rican because it's flavorful and it can serve a large quantity of people.
