Always in the Mood for Granny's FoodSpring is here. Elderberry is all around us. Our grannies used to take what nature offered them all year round and prepared it for winter. And winter is always long. Grannies knew how to preserve various foods in a natural way so that we could use them as much as possible during long winter days. Here, one of our grannies is going to show you how she prepares elderflower syrup.
DAY ONE
You want to pick the flowers on a sunny day. In the morning the flowers are at their peak, and their scent is still sweet and fresh. Choose flower heads that are fully open with no buds, but that are still fresh and white, not turning brown. We asked our students to help us with that.

Now that we have a full basket of elderflowers, our granny Jadranka has decided to give us a hand with syrup. She is going to do that with another group of students. First, ingredients we need:
40 flowers,
4 liters of water,
4 lemons and
2, 5 kg of sugar

DAY TWO
After gathering enough blossoms you can clean them and cut the lemon in pieces. Make sure you use organic, unwaxed lemons, which should be washed with hot water before you use them.
Cover with a clean cloth and keep in a dark and cold place for at least 24 hours.
