Omelette and a pumpkin cream

Omelette
We have chosen this recipe because we like this dish and we are very excited to prepare it. Moreover, it reminds us home because our families prepare this type of dishes.
Preparation
1. We start by caramelizing the onion. This process will take us 30 minutes.
2. Then, we put it in a frying pan over a low heat. Cook it slowly and stir it from time to time.
3. While the onion is done, peel the potatoes and cut them into thin slices.
4. We leave them in water for 15 minutes and then we put a pan with abundant olive oil.
5. Add the potatoes into the hot oil and fry them slowly.
6. Remove the potatoes and drain them. After that, place them in a large bowl.
7. Drain the onion, when it is ready put it on the potatoes. Beat the eggs and add them to the bowl. Stir everything with a fork so that the three ingredients are well mixed.
8. Curdle the omelette in a pan with a tablespoon for about three or four minutes and turn it over.

Pumpkin Cream
Preparation
1. Cut all vegetables into small pieces and put them in a bowl, add the broth until the vegetables are covered. Cook it all for 20 minutes until vegetables are tender.
2. After 20 minutes, we put all vegetables, the broth and cheese in a blender glass. Add salt, pepper and blend it until we have a smooth and creamy purée.
3. We serve it hot or cold, as the person prefers.
