Abbiamo scelto di presentare la ricetta della carbonara perche' in questi giorni abbiamo notato che non tutti conoscono la ricetta originale e in questo modo speriamo di diffondere la nostra cultura. Preparazione 1. Mettere una pentola d'acqua a bollire a fuoco medio 2. Nel frattempo mettere a rosolare solo il guanciale in padella 3. Preparare la crema con uova, formaggi, sale e pepe e mettere da parte il guanciale asciutto lasciando il grasso nella padella 4. Ad ebollizione, buttare la pasta e aspettare il tempo di cottura indicato sulla confezione 5. Scolare la pasta e metterla nella padella con il grasso del guanciale 6. Aggiungere la crema e il guanciale in padella 7. Impiattare

320 g pasta corta 150 g guanciale 6 uova 50 g Pecorino Romano DOP pepe e sale q.b.

Επιλέξαμε να παρουσιάσουμε τη συνταγή καρμπονάρα γιατί αυτές τις μέρες παρατηρήσαμε ότι δεν γνωρίζουν όλοι την αυθεντική συνταγή και με αυτόν τον τρόπο ελπίζουμε να διαδώσουμε τον πολιτισμό μας. Προετοιμασία 1. Βάζουμε μια στοίβα νερό να βράσει σε μέτρια φωτιά 2. Στο μεταξύ ροδίζουμε μόνο το μπέικον σε ένα τηγάνι 3. Ετοιμάζουμε την κρέμα με τα αυγά, το τυρί, αλάτι και πιπέρι και αφήνουμε στην άκρη το ξηρό μπέικον αφήνοντας το λίπος στο τηγάνι 4. Όταν βράσει, ρίξτε τα ζυμαρικά και περιμένετε τον χρόνο ψησίματος που αναγράφεται στη συσκευασία 5. Στραγγίζουμε τα ζυμαρικά και τα βάζουμε στο τηγάνι με το λίπος του μπέικον 6. Προσθέστε την κρέμα γάλακτος και το μπέικον στο τηγάνι 7. Σερβίρετε

Spanakopita (IT)

Preparazione 1) Tritare grossolanamente le verdure in una grande ciotola. 2) Aggiungere la cipolla fresca tritata, i porri tritati e le erbe fresche tagliuzzate (aneto, menta e prezzemolo). 3) Aggiungere sale e pepe. 4) Con le mani, amalgamare tutti gli ingredienti fino ad ottenere un composto omogeneo, per circa 1-2 minuti. 5) Aggiungere la feta grattugiata e mescolare. 6) Sbattere le uova, il latte bollito e l'olio d'oliva in una piccola ciotola. 7) Versare metà della miscela liquida nel ripieno con gli spinaci e mescolare. 8) Riservare la restante metà della miscela di uova. 9) Diluire la miscela di uova aggiungendo 50 g di acqua per diluirne la consistenza. 10) Ungere una grande padella poco profonda, 40 cm. 11) Stendere il primo grande foglio e assicurarsi che sporga dalle pareti della padella. 12) Irrorare con una piccola miscela di uova sottili. 13) Posare altre due strati di pasta. 14) Cospargere con un po' di olio d'oliva. 15) Spennallare leggermente con la miscela di uova. 16) Versare il ripieno in uno strato sottile sulla pasta. 17) Coprire con altre tre strati stropicciati. 18) Ogni volta che si depone uno strato, cospargere con il composto di uova e un po' di olio d'oliva. 19) Cuocere in forno ben preriscaldato a 180ºC per circa 1 ora e 10 minuti.

-1 confezione di foglie rustiche o 6 foglie rustiche fatte in casa -1/2 fl. olio d'oliva -------------------------- -1 kg di spinaci lavati e scolati (tagliati a pezzi grossi) -5 porri teneri tritati finemente -10 cipolle fresche (tenere) con le foglie tagliate a fette sottili -1 cipolla secca molto tritata o grattugiata -1 pz. aneto tritato (con i suoi steli) -1 pz. prezzemolo tritato (con i suoi steli) -1 pz. menta tritata (con i suoi gambi) -450 gr. feta matura grattugiata grossolanamente -1/2 fl. olio extra vergine di oliva -2 uova grandi -1/4 fl. acqua -sale (facoltativo) -Pepe (facoltativo)

Preparation 1) Coarsely chop the greens in a large basin (bowl). 2) Add chopped dry and fresh onion, add chopped tender leeks, tender onions with their leaves, chopped fresh herbs (dill, mint and parsley). 3) Add salt and pepper. 4) With the hands, rub all the ingredients until wilted, for about 1-2 minutes. 5) Add the grated feta and mix. 6) Beat the eggs, evaporated milk and olive oil in a small bowl. 7) Pour half the liquid mixture into the filling with the greens and mix. 8) Reserve the remaining half of the egg mixture for the leaves. 9) Dilute the reserved egg mixture by adding 50 g of water, to dilute its texture. 10) Grease a large, shallow pan, 40 cm. 11) Lay the first large sheet and make sure it protrudes from the walls of the pan. 12) Drizzle with a little thin egg mixture. 13) Lay two more traditional leaves, slightly crumpled to resemble grandma's spinach pie. 14) Sprinkle with a little olive oil in between. 15) Lightly sprinkle them with egg mixture. 16) Pour the filling in a thin layer on the leaves. 17) Cover with three more crumpled leaves. 18) Every time you lay a leaf, sprinkle between with egg mixture and a little olive oil. 19) Bake in a well preheated oven at 180ºC, on the resistances, on the bottom rack, for about 1 hour and 10 minutes.

We have chosen to present the carbonara recipe because in recent days we have noticed that not everyone knows the original recipe and in this way we hope to spread our culture. Preparation 1. Σπανακόπιτα (GR)

Προετοιμασία 1) Χοντροκόβουμε τα χόρτα σε μεγάλη μπασίνα (μπολ). 2) Ρίχνουμε ψιλοκομμένο το ξερό και το&nbsp;φρέσκο κρεμμύδι, προσθέτουμε τα ψιλοκομμένα τρυφερά&nbsp;πράσα, τα τρυφερά κρεμμύδια με τα φύλλα τους, τα ψιλοκομμένα φρέσκα μυρωδικά (άνηθο,&nbsp;δυόσμο και&nbsp;μαϊντανό). 3) Προσθέτουμε αλάτι και πιπέρι. 4) Με τα χέρια, τρίβουμε όλα τα υλικά μέχρι να μαραθούν, για περίπου 1-2 λεπτά. 5) Προσθέτουμε τη&nbsp;φέτα σε τρίμματα και ανακατεύουμε. 6) Σε μικρό μπόλ χτυπάμε τα αυγά, το εβαπορέ γάλα και το ελαιόλαδο. 7) Ρίχνουμε το μισό υγρό μείγμα στη γέμιση με τα χόρτα και ανακατεύουμε. 8) Το υπόλοιπο μισό μείγμα αυγού, το κρατάμε για τα φύλλα. 9) Αραιώνουμε το μείγμα αυγού που κρατήσαμε προσθέτοντας 50 γραμ. νερό, για να αραιώσει η υφή του. 10) Λαδώνουμε ένα μεγάλο, ρηχό ταψί, 40 εκατ. 11) Στρώνουμε το πρώτο μεγάλο φύλλο και φροντίζουμε να εξέχει από τα τοιχώματα του ταψιού. 12) Ραντίζουε με λίγο αραιό μείγμα αυγού. 13) Στρώνουμε άλλα δύο&nbsp;χωριάτικα φύλλα, ελαφρώς τσαλακωμένα να θυμίζουν σπανακόπιτα της γιαγιάς. 14) Ραντίζουμε με λίγο ελαιόλαδο ενδιάμεσα. 15) Τα ραντίζουμε ελαφρά με μείγμα αυγού. 16) Αδειάζουμε τη γέμιση σε λεπτή στρώση πάνω στα φύλλα. 17) Σκεπάζουμε με άλλα τρία φύλλα τσαλακωμένα. 18) Κάθε φορά που στρώνουμε ένα φύλλο, ραντίζουμε ανάμεσα με μείγμα αυγού και λίγο ελαιόλαδο. 19) Ψήνουμε σε καλά προθερμασμένο φούρνο στους 180ºC, στις αντιστάσεις, στη κάτω σχάρα, για περίπου 1 ώρα και 10 λεπτά.
