Welcome to our Food Memories Cookbook!

In this book, you will find a memory about a food that has some significance to us. We have organized it into Mains and Sides and then of course Desserts!

First we tell you a little bit about the memory we have associated with the food. Mind you, not all of our memories are favorable or flavor-able but we still provide you with a recipe so you can be the judge!

Latkes

Latkes are fried potato pancakes that most Jewish people really enjoy on Hanukkah. We eat this for lunch and dinner. This food is only good when it isn’t to salty.

One time, at Hebrew school my peers and I were in the kitchen making latkes. We had to listen to a very long and informing lesson about what to do and what to not do. My attention span couldn't take it any more because I already knew how to make latkes. Then we finally got to the part where we could get to the cooking.

While we were making them, we thought everything was fine until we got to the part were we had to fry them. I often burn myself but that was okay, I'm used to it. Little did we know that the chimney wasn't open so suddenly the fire alarm went off! Yet, that wasn't the worst thing! People in the chapel doing something very important in the Jewish religion. So, everyone evacuated the building... But there were a few people who hadn't left. Can you guess who? It was my friends and I who stayed in the building because we didn't really care about the "fire" because we knew there was no fire, but no one else knew. In the end, the fire fighters came and everything was okay. So now it's an inside joke that we burnt down the kitchen.

Throughout that experience I still love latkes and they're one of my favorite foods. This year we made them again. I burnt myself three times and the guy next to me didn’t handle the pain as well I did. Oh well!

1 1/2 pounds baking potatoes (3 to 4 potatoes)
1/2 medium yellow onion, peeled and quartered
1 large egg
2 tablespoons matzo meal or unseasoned dry breadcrumbs
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 cup canola oil or chicken schmaltz, or a combination of both
Applesauce and sour cream, for serving
Step-by-Step Guide to Easy, Simple Classic Latkes
Prepare your setup. Heat the oven and prep a baking sheet with a wire cooling rack, so latkes can stay warm and crisp. Prepare a paper towel-lined baking pan ready to receive piping-hot latkes for draining.
Grate the potatoes and onions. Use the large shredding blade on your food processor to grate the potatoes and onions in seconds. A box grater works well too (it just requires some extra elbow grease).
Squeeze the potatoes and onion. To get crispy latkes, the potato and onion mixture needs to be dry. A tea towel absorbs the liquid and starch, while cheesecloth lets it pass right through. Tie the cheesecloth around the handle of a wooden spoon for extra leverage in squeezing.
Mix the potato starch, egg, matzo, salt, and pepper with the potatoes and onion. Use your fingers to evenly distribute all of the ingredients. The potato starch is slippery and wants to cling to itself. Be sure to work it into the potato mixture.
Form latkes. Use a 1/4 cup measuring cup, a fish spatula, your fingers, and a fork to form a flat, four-inch patty.
Fry the latkes. Heat the oil (and schmaltz, if using) until latkes sizzle immediately upon entering the oil. Fry until each side is dark golden-brown.
Drain and serve. Remove hot, crisp latkes from the oil and drain on paper towels. Serve or keep warm in the oven.

Latkes

When I eat latkes all of my problems go away. The combination of salt and apple sauce is the best thing ever. My family eats this almost every day of hanukkah. We make it right before be light the candles on the menorah. When we make the latkes the whole family gets brought together to have a good time, it is a good way for holiday bonding.

I remember the first time that I had latkes, it was at my grandparents' house and my family convinced me to try one. Once I had one I couldn't stop. It was like heaven, I even had different combinations. For example, latkes with butter and cinnamon is the best because of the bitter sweetness and the soothing butter. I was so full that I didn't even eat dinner that night When I finally stopped eating I wanted to throw up, but at the same time I was thinking about how good the latkes will be the next night.
